Costa Rica celebrates Easter in a huge way. The country's population is approx. 4 million & 75% of them live in the center of the country in the capital, San Jose. They all head to the beaches this time of year. Many businesses are closed. Here in our small community, the cars line both sides of the roads. Our usually sparsely populated beaches have families everywhere enjoying the sun and water. Being that our town was so full last night, of course we had to lose power for about an hour.
Dinner was in our temperamental oven and half cooked. I had spend two hours with Freddy and a cooking class to prepare this dinner.
On the menu: Pork chops with a dijon mustard sauce, carrots & peas with all the spices (hot day to stand over a hot stove), and some choyote local vegetable. We moved the dinner to the butane grill and it survived quite well. Once the power was back on, the music was in full force at the resort's pool bar.
Just a small example of family at our small beach. The Portero & Flamingo beaches are packed.
